At Whitewolfe, viticulture and winemaking are not separate disciplines. They are one continuous act; cultivating exceptional Chardonnay grapes and shaping them into elegant, precise cool-climate wines.
Our Chardonnay is grown on lime-rich loams over chalk, where free drainage and moderated vigour allow slow, even ripening. We harvest when flavour, structural balance and phenolic maturity align. The objective is not simply ripeness, but balanced concentration, flavours, sugars and natural structural integrity.
Whilst our vineyards set the direction, the cellar brings precision. Each decision is deliberate, building on the vineyard’s foundation to sharpen fruit detail and mineral definition while preserving the subtle salinity that originates from our chalk-based vineyards.

Fermentation & Elevage
Each parcel is handled separately by block, press fraction, barrel format and yeast expression, forming a mosaic of micro-ferments.
Blending is meticulous at Whitewolfe. Each barrel is tasted and graded multiple times throughout élevage. Only those that elevate the final composition are selected for the KC wines.
Barrel fermentation is fundamental to our style, allowing each component to develop with definition while encouraging early integration of fruit and structure through gentle oxygen exchange from the outset.
